Blackwater CreekKoi Farms has three rms, the biggest inBlountstown, and headquarters in Eustis.
The company now has 65 acres between Central Florida andBlountstown, with theBlountstown rm occupying just under 40 acres.
Now a married couple of nearly 16 years,Joe andCheryl have added to their pet collection over the years, with upwards of 15 total, according toJoe, including a dog, as many as seven cats, a rabbit, two turtles, and a peacock.
But the couple said that they still get great pleasure from their day to day work ? even when it doesn?t include prepping fish eggs forspace travel.
We call it the shining star of the company,Joe said of theBlountstown rm. It?s truly big and very well done.

It?s kind of like a goat,Joe said. It was pretty low maintenance.
A koi rm is similar to a diamond mine,Joe said. We go through tons of dirt to get a few diamonds that are worth something. The dirt is free, but the diamonds are expensive.
Within a month, the fish are approximately an inch long, and most will eventually grow to between 4 and 16 inches.
The fish at each rm are given a hormone shot, and then lay their eggs on a coconut matting ? similar to an air condition filter ? and the eggs are placed into ponds where they hatch within four days.
It wasn?t always like that; before expansion, it was a two-person operation, with bothJoe andCheryl sharing in all of the rming duties.
I miss the outdoors,Cheryl said wistfully. It used to be when it was onlyJoe and I, we were the ones netting up the ponds and looking up the fish, pulling the fish for orders. I do miss that.

The company still ships approximately 6,000 boxes of fish per year containing up to 125 fish per box, so there is still demand for the colorful domesticated fish that the Pawlak?s fell in love with years ago.
It?s hard, demanding outdoor work,Joe said. But anyone who likes the outdoors would love it.

I grew up in northernNorth Dakota ????, so I was always a big n of hunting and fishing and the outdoors,Cheryl said. I grew up with a lot of pets: horses, dogs, and cats.

One animal you won?t find in the Pawlak?s stable of personal pets is a fish.
Not everybody needs a luxury fish when they can?t pay for their home mortgage,Joe said. Sales have gone flat, but we?re still one of the largest producers of quality koi in the country. We?re increasing our quality and trying to hold our price, but koi rming is very difficult.
Koi are common carp with pretty colors essentially,Joe said. They originated inJapan about 200 years ago. You can put them in backyard ponds, and koi can be taught to recognize an owner and feed out of their hand.
Then college students atAlexandria Technical College in Alexandria,Minn.,Joe andCheryl were vaguely miliar with each other at the time, but they soon discovered just how much common ground they shared.
The remaining months of the year are for repair and upkeep of the rms.
There, she worked her way up into a management position with the company beforeCheryl andJoe started their own rm on the side, which later became Blackwater CreekKoi Farms.
Cheryl did an internship inSacramento at a mom-and-pop water garden rm, raising water lilies and other plants before developing an interest in koi and joiningJoe at Aquatic Ecosystems.
The average pond owner increases the population of the pond four times over the life of their hobby. They get addicted to it, and want to add more fish. They say how relaxing it is to see the fish after a hard day of work.
I get to do the bookwork,Cheryl said. I get the fun job of entering in and keep all the books up to date, paying the bills, and sure we have enough money to make payroll.
Joe handles the bulk of the breeding process, whileCheryl handles more of the business side of the company.
After college,Joe went toCalifornia to raise koi, as well as large-mouthed and striped bass before eventually going to work at Aquatic Ecosystems in Apopka.

Business has been slower recently, however, asBlackwater Creek hasn?t been immune to the economy?s struggles.
It became a passion for us,Cheryl said. You never know what you?re going to get (with koi breeding). When you raise them up from small to big, the fish always change. They never look the same. You look at a catfish, and all catfish look the same. No koi looks the same. There?s never one that looks exactly like another. Coming up with new varieties is really fun and exciting.
But he said there?s always room for more help.

Joe said the toughest part of managing the business is finding skilled labor to work at the rms.
